Carrot and Quinoa Salad

This refreshing and nutritious salad combines the flavors of carrots, quinoa, and a tangy lemon dressing.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 1/4 cup, chopped
  • Red bell pepper - 1, diced
  • Cucumber - 1, diced
  • Carrots - 2 large, grated
  • Quinoa - 1 cup

Instructions

  1. Rinse the quinoa under cold water and cook according to package instructions. Once cooked, let it cool.
  2. In a large bowl, combine the cooked quinoa, grated carrots, diced cucumber, diced red bell pepper, and chopped parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss to combine.
  5. Refrigerate for at least 30 minutes to allow the flavors to meld together.
  6. Serve chilled and enjoy!
