Canadian Rockies Roast

This Canadian Rockies Roast is a hearty and flavorful beef roast seasoned with Canadian-inspired spices.

Ingredients

  • Olive oil - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Smoked paprika - 1 tablespoon
  • Onion powder - 1 tablespoon
  • Garlic powder - 1 tablespoon
  • Worcestershire sauce - 2 tablespoons
  • Dijon mustard - 2 tablespoons
  • Maple syrup - 1/4 cup
  • Beef roast - 3 pounds

Instructions

  1. Preheat the oven to 325°F.
  2. In a small bowl, mix together the maple syrup, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper to create a marinade.
  3. Place the beef roast in a roasting pan and pour the marinade over it, making sure to coat all sides.
  4. Cover the roasting pan with foil and let the roast marinate in the refrigerator for at least 1 hour, or overnight for maximum flavor.
  5. Remove the roast from the refrigerator and let it come to room temperature for about 30 minutes.
  6. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
  7. Transfer the roast back to the roasting pan and place it in the preheated oven.
  8. Roast for about 2.5-3 hours, or until the internal temperature reaches your desired level of doneness (145°F for medium-rare, 160°F for medium, 170°F for well-done).
  9. Remove the roast from the oven and let it rest for 10-15 minutes before slicing.
