This hearty breakfast burrito is filled with scrambled eggs, crispy bacon, melted cheese, and fresh vegetables.

Ingredients

  • Salt and pepper - To taste
  • Salsa - 1/4 cup
  • Avocado - 1, sliced
  • Red onion - 1/4, thinly sliced
  • Bell pepper - 1/2, diced
  • Cheddar cheese - 1/2 cup, shredded
  • Bacon - 4 slices, cooked and crumbled
  • Eggs - 4
  • Tortillas - 2 large

Instructions

  1. In a bowl, whisk the eggs with salt and pepper.
  2. Heat a non-stick skillet over medium heat and add the whisked eggs. Cook, stirring occasionally, until scrambled and cooked through.
  3. Warm the tortillas in a dry skillet or microwave.
  4. Divide the scrambled eggs, crumbled bacon, shredded cheese, diced bell pepper, sliced red onion, avocado, and salsa evenly among the tortillas.
  5. Fold the sides of the tortillas over the filling, then roll up tightly to form burritos.
  6. Optional: Heat a skillet over medium heat and lightly toast the burritos on all sides for a crispier texture.
