Breakfast Burrito

This hearty breakfast burrito is filled with scrambled eggs, crispy bacon, melted cheese, and fresh vegetables.

Ingredients

  • Cilantro - 2 tablespoons, chopped
  • Avocado - 1, sliced
  • Salsa - 1/4 cup
  • Salt and pepper - To taste
  • Onion - 1/4 cup, diced
  • Bell peppers - 1/2 cup, diced
  • Cheddar cheese - 1/2 cup, shredded
  • Bacon - 4 slices, cooked and crumbled
  • Eggs - 4
  • Tortillas - 2 large

Instructions

  1. In a bowl, whisk the eggs with salt and pepper.
  2. Heat a non-stick skillet over medium heat and add the diced onion and bell peppers. Cook until softened, about 5 minutes.
  3. Push the vegetables to one side of the skillet and pour in the beaten eggs. Scramble the eggs until cooked through.
  4. Warm the tortillas in a dry skillet or microwave.
  5. Divide the scrambled eggs, crumbled bacon, shredded cheese, salsa, avocado slices, and chopped cilantro evenly among the tortillas.
  6. Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
  7. Serve immediately and enjoy!
