Breakfast Burritos

These delicious breakfast burritos are filled with scrambled eggs, crispy bacon, melted cheese, and fresh vegetables.

Ingredients

  • Cilantro - 2 tablespoons, chopped
  • Avocado - 1, sliced
  • Salsa - 1/2 cup
  • Salt and pepper - To taste
  • Onion - 1/4 cup, diced
  • Bell peppers - 1/2 cup, diced
  • Cheddar cheese - 1 cup, shredded
  • Bacon - 8 slices, cooked and crumbled
  • Eggs - 6
  • Tortillas - 4 large

Instructions

  1. In a large skillet, cook the bacon until crispy. Remove from the skillet and crumble into small pieces.
  2. In the same skillet, sauté the bell peppers and onion until they are soft and slightly caramelized.
  3. In a bowl, whisk the eggs and season with salt and pepper.
  4. Pour the whisked eggs into the skillet with the sautéed vegetables. Cook over medium heat, stirring occasionally, until the eggs are scrambled and cooked through.
  5. Warm the tortillas in a separate skillet or in the microwave.
  6. Place a spoonful of the scrambled eggs onto each tortilla. Top with crumbled bacon, shredded cheese, salsa, avocado slices, and chopped cilantro.
  7. Fold the sides of the tortilla over the filling, then roll it up tightly to form a burrito.
  8. Serve the breakfast burritos warm and enjoy!
