Bolo de Arroz

Ingredients

• Powdered sugar - For dusting
• Lemon zest - 1 teaspoon
• Vanilla extract - 1 teaspoon
• Baking powder - 2 teaspoons
• Eggs - 3
• Milk - 1 cup
• Butter - 1/2 cup, melted
• Sugar - 1 cup
• Rice flour - 2 cups

Instructions

1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
2. In a large bowl, mix together the rice flour, sugar, melted butter, milk, eggs, baking powder, vanilla extract, and lemon zest until well combined.
3. Pour the batter into the greased cake pan and smooth the top with a spatula.
4. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
5. Remove the cake from the oven and let it cool in the pan for 10 minutes.
6. Transfer the cake to a wire rack to cool completely.
7. Once cooled, dust the top of the cake with powdered sugar.
8. Slice and serve the Bolo de Arroz as a delightful dessert.
