Torta Paradiso

Torta Paradiso, also known as Paradise Cake, is a soft and light Italian dessert that originated in Pavia. It's a perfect blend of sponge cake and pastry cream.

Ingredients

  • Powdered sugar - For dusting
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Potato starch - 100 grams
  • Flour - 200 grams
  • Eggs - 4
  • Sugar - 200 grams
  • Butter - 200 grams

Instructions

  1. Preheat the oven to 180°C (350°F) and butter and flour a 24 cm (9 inch) cake pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In a separate bowl, combine the flour, potato starch, and baking powder.
  5. Gradually add the dry ingredients to the butter mixture, mixing well after each addition.
  6. Stir in the lemon zest and vanilla extract.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  10. Before serving, dust the top of the cake with powdered sugar.
