Bok Choy and Tofu Stir Fry

This delicious stir fry combines bok choy and tofu with a flavorful sauce.

Ingredients

  • Cooking oil - 2 tablespoons
  • Salt and pepper - To taste
  • Red pepper flakes - 1/2 teaspoon
  • Vegetable broth - 1/4 cup
  • Cornstarch - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Firm tofu - 8 ounces, cubed
  • Bok choy - 2 heads, chopped

Instructions

  1. In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, vegetable broth, and red pepper flakes. Set aside.
  2. Heat the cooking oil in a large skillet or wok over medium-high heat.
  3. Add the minced garlic and grated ginger to the skillet and cook for 1 minute, until fragrant.
  4. Add the cubed tofu to the skillet and cook for 5 minutes, until lightly browned.
  5. Add the chopped bok choy to the skillet and cook for 3-4 minutes, until wilted.
  6. Pour the sauce mixture over the tofu and bok choy in the skillet. Stir well to coat everything evenly.
  7. Cook for an additional 2 minutes, until the sauce has thickened.
  8. Season with salt and pepper to taste.
  9. Serve the bok choy and tofu stir fry hot over steamed rice or noodles.
