Ingredients

  • Cooking oil - 2 tablespoons
  • Salt and pepper - To taste
  • Water - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Vegetable broth - 1/4 cup
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Baby corn - 1 cup
  • Bok choy - 4 heads, chopped

Instructions

  1. In a small bowl, whisk together the soy sauce, sesame oil, vegetable broth, cornstarch, water, garlic, and ginger. Set aside.
  2. Heat the cooking oil in a large skillet or wok over medium-high heat.
  3. Add the baby corn and stir fry for 2-3 minutes, until slightly tender.
  4. Add the bok choy and continue to stir fry for another 2-3 minutes, until wilted.
  5. Pour the sauce mixture over the vegetables and stir fry for an additional 1-2 minutes, until the sauce thickens and coats the vegetables.
  6. Season with salt and pepper to taste.
  7. Serve hot as a main course or as a side dish with steamed rice or noodles.
