Bok Choy and Chicken Lo Mein

This delicious and healthy Bok Choy and Chicken Lo Mein is packed with flavor and nutrients.

Ingredients

  • Sesame seeds - 1 tablespoon
  • Green onions - 2, sliced
  • Salt and pepper - To taste
  • Vegetable oil - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Oyster sauce - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Snow peas - 1 cup
  • Carrots - 2, julienned
  • Bok choy - 4 cups, chopped
  • Chicken breast - 2, boneless and skinless, thinly sliced
  • Lo mein noodles - 8 ounces

Instructions

  1. Cook the lo mein noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the chicken slices and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the garlic and ginger. Cook for 1 minute until fragrant.
  5. Add the bok choy, carrots, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  6. In a small bowl, whisk together the soy sauce, oyster sauce, and sesame oil.
  7. Return the cooked chicken to the skillet and add the cooked lo mein noodles.
  8. Pour the sauce over the chicken and noodles. Toss everything together until well coated.
  9. Season with salt and pepper to taste.
  10. Garnish with sliced green onions and sesame seeds.
  11. Serve hot and enjoy!
