This delicious chow mein recipe features bok choy and a variety of colorful vegetables stir-fried with noodles in a savory sauce.

Ingredients

  • Sesame seeds - 1 tablespoon (for garnish)
  • Green onions - 2, sliced (for garnish)
  • Salt and pepper - To taste
  • Cornstarch - 1 tablespoon
  • Vegetable broth - 1/4 cup
  • Sesame oil - 1 tablespoon
  • Soy sauce - 3 tablespoons
  • Ginger - 1 tablespoon, minced
  • Garlic - 3 cloves, minced
  • Mushrooms - 8 ounces, sliced
  • Snow peas - 1 cup
  • Bell peppers - 2, thinly sliced
  • Carrots - 2, julienned
  • Bok choy - 2 heads, chopped
  • Chow mein noodles - 8 ounces

Instructions

  1. Cook the chow mein noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce, sesame oil, vegetable broth, cornstarch, salt, and pepper. Set aside.
  3. Heat a large wok or skillet over high heat. Add a tablespoon of oil and swirl to coat the pan.
  4. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  5. Add the sliced mushrooms, julienned carrots, and thinly sliced bell peppers. Stir-fry for 2-3 minutes until the vegetables start to soften.
  6. Add the chopped bok choy and snow peas. Stir-fry for another 2 minutes until the bok choy wilts slightly.
  7. Pour the sauce mixture over the vegetables and stir well to coat. Cook for an additional 1-2 minutes until the sauce thickens.
  8. Add the cooked chow mein noodles to the wok and toss to combine with the vegetables and sauce. Cook for another 2 minutes to heat through.
  9. Remove from heat and garnish with sliced green onions and sesame seeds.
  10. Serve hot and enjoy!
