Biscotti del Lagaccio are traditional Italian cookies from Genoa. They are sweet, crunchy, and perfect for dipping in coffee or wine.

Ingredients

  • Almonds - 1 cup, chopped
  • Vanilla extract - 1 teaspoon
  • Eggs - 3
  • Salt - 1/4 teaspoon
  • Baking powder - 1 teaspoon
  • Sugar - 1 cup
  • All - purpose flour - 2 cups

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and vanilla extract together. Gradually add the egg mixture to the flour mixture, stirring until a dough forms.
  4. Fold in the chopped almonds.
  5. Divide the dough in half and shape each half into a log. Place the logs on the prepared baking sheet.
  6. Bake for 25 minutes, or until the logs are lightly browned.
  7. Remove the logs from the oven and let them cool for 10 minutes. Then, slice the logs into 1/2-inch thick slices.
  8. Return the slices to the baking sheet and bake for an additional 15 minutes, or until they are golden and crispy.
  9. Let the biscotti cool completely before serving.
