Almond Biscotti

These crunchy Italian cookies are perfect for dipping in coffee or tea.

Ingredients

  • Almonds - 1 cup, chopped
  • Eggs - 2
  • Sugar - 1 cup
  • Butter - 1/2 cup, softened
  • Salt - 1/4 teaspoon
  • Baking powder - 1 1/2 teaspoons
  • All - purpose flour - 2 cups

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the flour mixture and almonds until well combined.
  6. Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide.
  7. Place the logs on a baking sheet lined with parchment paper and bake for 25 minutes, or until lightly golden brown.
  8. Remove from the oven and let cool for 10 minutes.
  9. Using a serrated knife, slice the logs into 1/2-inch thick slices.
  10. Place the slices cut-side down on the baking sheet and bake for an additional 20-25 minutes, or until golden brown and crisp.
  11. Let cool completely before serving.
