Bell Pepper and Shrimp Stir Fry

This delicious stir fry combines bell peppers and shrimp in a flavorful sauce.

Ingredients

  • Green onions - 2 stalks, chopped (for garnish)
  • Salt and pepper - To taste
  • Cooking oil - 2 tablespoons
  • Water - 1/4 cup
  • Cornstarch - 1 teaspoon
  • Honey - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Shrimp - 1 pound, peeled and deveined
  • Bell peppers - 2 large, thinly sliced

Instructions

  1. In a small bowl, whisk together soy sauce, sesame oil, honey, cornstarch, and water. Set aside.
  2. Heat cooking oil in a large skillet or wok over medium-high heat.
  3. Add minced garlic and grated ginger to the skillet and cook for 1 minute, until fragrant.
  4. Add bell peppers to the skillet and stir fry for 2-3 minutes, until slightly softened.
  5. Push the bell peppers to one side of the skillet and add shrimp to the other side. Cook shrimp for 2-3 minutes, until pink and cooked through.
  6. Pour the sauce mixture over the shrimp and bell peppers. Stir well to coat everything in the sauce.
  7. Cook for an additional 1-2 minutes, until the sauce has thickened.
  8. Season with salt and pepper to taste.
  9. Remove from heat and garnish with chopped green onions.
  10. Serve hot over steamed rice or noodles.
