Pepper and Mushroom Stir Fry

This delicious stir fry is made with colorful bell peppers, mushrooms, and a flavorful sauce.

Ingredients

  • Green onions - 2, sliced (for garnish)
  • Salt and pepper - To taste
  • Cooking oil - 2 tablespoons
  • Water - 1/4 cup
  • Cornstarch - 1 teaspoon
  • Honey - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Mushrooms - 8 ounces, sliced
  • Bell peppers - 2, thinly sliced

Instructions

  1. In a small bowl, whisk together soy sauce, sesame oil, honey, cornstarch, and water. Set aside.
  2. Heat cooking oil in a large skillet or wok over medium-high heat.
  3. Add garlic and ginger, and cook for 1 minute until fragrant.
  4. Add bell peppers and mushrooms to the skillet, and stir fry for 5-6 minutes until vegetables are tender-crisp.
  5. Pour the sauce mixture over the vegetables, and stir well to coat.
  6. Cook for an additional 2-3 minutes until the sauce thickens.
  7. Season with salt and pepper to taste.
  8. Remove from heat and garnish with sliced green onions.
  9. Serve hot over steamed rice or noodles.
