Ingredients

  • Lettuce - 4 leaves
  • Cucumber - 1, sliced
  • Tomato - 1, sliced
  • Pita bread - 4 pieces
  • Olive oil - 2 tablespoons
  • Water - 1/4 cup
  • Lemon juice - 2 tablespoons
  • Tahini - 1/2 cup
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Coriander - 1 teaspoon
  • Cumin - 1 teaspoon
  • Parsley - 1/4 cup, finely chopped
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Ground beef - 1 pound

Instructions

  1. In a large bowl, combine the ground beef, chopped onion, minced garlic, chopped parsley, cumin, coriander, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  2. Divide the mixture into 8 equal portions and shape each portion into a long, cylindrical kofta shape.
  3. Preheat a grill or grill pan over medium-high heat. Brush the kofta skewers with olive oil to prevent sticking.
  4. Grill the kofta skewers for about 12-15 minutes, turning occasionally, until they are cooked through and nicely browned on all sides.
  5. While the kofta is grilling, prepare the tahini sauce by combining tahini, lemon juice, water, minced garlic, salt, and black pepper in a bowl. Whisk until smooth and creamy.
  6. Warm the pita bread on the grill for a few seconds on each side.
  7. To serve, spread a generous amount of tahini sauce on each warmed pita bread. Place a few kofta skewers on top and garnish with sliced tomatoes, cucumbers, and lettuce.
  8. Fold the pita bread over the kofta and enjoy!
