Edamame Falafel with Tahini Sauce

This is a delicious and healthy twist on traditional falafel, using edamame instead of chickpeas. The tahini sauce adds a creamy, tangy finish.

Ingredients

  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Water - 2-3 tablespoons
  • Tahini - 1/2 cup
  • Olive oil - For frying
  • Salt and pepper - To taste
  • Flour - 1/4 cup
  • Lemon juice - 2 tablespoons
  • Coriander - 1 teaspoon
  • Cumin - 1 teaspoon
  • Parsley - 1/2 cup, chopped
  • Garlic - 2 cloves, minced
  • Edamame - 2 cups, shelled and cooked

Instructions

  1. In a food processor, combine the edamame, garlic, parsley, cumin, coriander, lemon juice, flour, salt, and pepper. Process until smooth.
  2. Form the mixture into small patties and set aside.
  3. Heat the olive oil in a large skillet over medium heat. Add the falafel patties and cook until golden brown on both sides, about 3-4 minutes per side.
  4. While the falafel is cooking, make the tahini sauce. In a small bowl, whisk together the tahini, water, garlic, and lemon juice until smooth.
  5. Serve the falafel with the tahini sauce on the side.
