Bacon and Egg Breakfast Skillet

This hearty breakfast skillet is packed with crispy bacon, eggs, and potatoes for a delicious start to your day.

Ingredients

  • Green onions - 2 tablespoons, chopped
  • Cheddar cheese - 1/2 cup, shredded
  • Salt and pepper - To taste
  • Eggs - 4
  • Bell pepper - 1, diced
  • Onion - 1 small, diced
  • Potatoes - 2 medium, diced
  • Bacon - 4 slices, chopped

Instructions

  1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside.
  2. In the same skillet, add the diced potatoes and cook until golden brown and crispy, about 10 minutes.
  3. Add the diced onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Push the potato mixture to one side of the skillet and crack the eggs into the empty space. Season with salt and pepper.
  5. Cook the eggs to your desired doneness, either sunny-side up or scrambled.
  6. Sprinkle the cooked bacon, shredded cheddar cheese, and chopped green onions over the skillet.
  7. Cover the skillet with a lid or aluminum foil and cook for an additional 2-3 minutes, or until the cheese is melted.
