Ingredients

  • Salt and pepper - To taste
  • Parsley - A handful, chopped
  • Tomatoes - 400 grams, chopped
  • Onion - 1, finely chopped

  • Salted cod - 500 grams

Instructions

  1. Soak the salted cod in cold water for 24 hours, changing the water several times.
  2. Heat the olive oil in a pan over medium heat.
  3. Add the garlic and onion and cook until soft.
  4. Add the tomatoes and cook for 10 minutes.
  5. Add the soaked cod, breaking it into pieces with a spoon.
  6. Season with salt and pepper and cook for about 2 hours, until the cod is tender.
  7. Sprinkle with parsley before serving.
