Ingredients

  • Salt and pepper - To taste
  • Parsley - A handful, chopped
  • White wine - 1/2 cup
  • Olive oil - 3 tablespoons
  • Tomatoes - 400 grams, chopped
  • Garlic - 2 cloves, minced
  • Onions - 2, thinly sliced
  • Salted cod - 500 grams

Instructions

  1. Soak the salted cod in cold water for 24 hours, changing the water 3-4 times.
  2. Heat the olive oil in a large pan over medium heat.
  3. Add the onions and garlic and cook until the onions are soft and golden, about 10 minutes.
  4. Add the chopped tomatoes, white wine, and parsley. Season with salt and pepper.
  5. Add the soaked and drained cod to the pan. Cover and simmer for about 2 hours, until the cod is tender and the flavors are well combined.
  6. Serve the Baccalà alla Romana hot, garnished with extra parsley.
