Ingredients

  • Butter - 2 tablespoons, cold and cubed
  • Brown sugar - 2 tablespoons
  • Flour - 1/4 cup
  • Vanilla extract - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Honey - 2 tablespoons
  • Dried apricots - 1/2 cup, chopped
  • Milk - 1 1/2 cups
  • Rolled oats - 1 cup

Instructions

  1. In a saucepan, combine the rolled oats, milk, dried apricots, honey, cinnamon, and vanilla extract.
  2. Cook over medium heat, stirring occasionally, until the oats are tender and the mixture has thickened, about 10-15 minutes.
  3. In a separate bowl, mix together the flour and brown sugar.
  4. Add the cold cubed butter to the flour mixture and use your fingers to rub it in until the mixture resembles coarse crumbs.
