Apricot Cobbler Oatmeal

Ingredients

  • Butter - 2 tablespoons, melted
  • Brown sugar - 2 tablespoons
  • Oat flour - 1/4 cup
  • Honey - 2 tablespoons
  • Vanilla extract - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Dried apricots - 1/2 cup, chopped
  • Water - 2 cups
  • Rolled oats - 1 cup

Instructions

  1. In a saucepan, bring the water to a boil.
  2. Add the rolled oats, dried apricots, cinnamon, and vanilla extract to the boiling water.
  3. Reduce the heat to low and simmer for 10-15 minutes, or until the oats are cooked and the apricots are soft.
  4. In a small bowl, mix together the oat flour, brown sugar, and melted butter to create the oat topping.
  5. Divide the cooked oatmeal into serving bowls and sprinkle the oat topping over the oatmeal.
  6. Place the bowls under the broiler for 2-3 minutes, or until the oat topping is golden and crispy.
  7. Remove from the broiler and let cool for a few minutes before serving.
  8. Drizzle honey over the top of each bowl and enjoy!
