Apricot Cobbler Porridge

Ingredients

  • Butter - 4 tablespoons, cold and cubed
  • Brown sugar - 1/4 cup
  • All - purpose flour - 1/2 cup
  • Vanilla extract - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Honey - 2 tablespoons
  • Dried apricots - 1/2 cup, chopped
  • Milk - 2 cups
  • Rolled oats - 1 cup

Instructions

  1. In a saucepan, combine the rolled oats, milk, dried apricots, honey, cinnamon, and vanilla extract.
  2. Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes, or until the oats are cooked and the porridge has thickened.
  3. In a separate bowl, combine the all-purpose flour and brown sugar.
  4. Add the cold, cubed butter to the flour mixture and use your fingers to rub it in until the mixture resembles coarse crumbs.
  5. Sprinkle the cobbler topping over the cooked porridge.
  6. Place the saucepan under the broiler for 2-3 minutes, or until the cobbler topping is golden and crispy.
