Apricot Crisp Parfait

This delightful apricot crisp parfait combines layers of sweet apricot compote, crunchy oat crisp, and creamy yogurt for a delicious and satisfying dessert.

Ingredients

  • Honey - 2 tablespoons
  • Greek yogurt - 1 cup
  • Butter - 1/2 cup, cold and cubed
  • Cinnamon - 1 teaspoon
  • Brown sugar - 1/2 cup
  • Flour - 1/2 cup
  • Oats - 1 cup
  • Cornstarch - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Sugar - 1/4 cup
  • Apricots - 4 cups, pitted and sliced

Instructions

  1. Preheat the oven to 375°F.
  2. In a saucepan, combine the sliced apricots, sugar, lemon juice, and cornstarch. Cook over medium heat until the mixture thickens and the apricots are soft, about 10 minutes. Remove from heat and let cool.
  3. In a separate bowl, combine the oats, flour, brown sugar, cinnamon, and cold cubed butter. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  4. Spread the oat mixture onto a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until golden brown and crispy. Remove from the oven and let cool.
  5. In serving glasses or bowls, layer the apricot compote, oat crisp, and Greek yogurt. Repeat the layers until all the ingredients are used, ending with a layer of yogurt on top.
  6. Drizzle honey over the top layer of yogurt.
  7. Serve immediately and enjoy!
