Apricot Crisp Tacos

These delicious apricot crisp tacos are a unique twist on traditional tacos. The crispy taco shells are filled with a sweet and tangy apricot filling, topped with a crunchy oat crumble, and served with a dollop of whipped cream.

Ingredients

  • Whipped cream - For serving
  • Brown sugar - 1/4 cup
  • Oats - 1/2 cup
  • Butter - 2 tablespoons, melted
  • Flour tortillas - 8 small
  • Cinnamon - 1/2 teaspoon
  • Cornstarch - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Sugar - 1/4 cup
  • Apricots - 2 cups, pitted and chopped

Instructions

  1. Preheat the oven to 350°F.
  2. In a saucepan, combine the chopped apricots, sugar, lemon juice, cornstarch, and cinnamon. Cook over medium heat until the mixture thickens, stirring constantly. Remove from heat and set aside.
  3. Brush the flour tortillas with melted butter on both sides. Place them on a baking sheet and bake for 5-7 minutes, or until crispy.
  4. In a small bowl, mix together the oats and brown sugar. Sprinkle the mixture evenly over the tortillas.
  5. Return the baking sheet to the oven and bake for an additional 5 minutes, or until the oat crumble is golden and crispy.
  6. Remove the tortillas from the oven and let them cool slightly.
  7. To assemble the tacos, spoon the apricot filling onto each crispy tortilla shell.
  8. Top with a dollop of whipped cream and serve immediately.
