This sweet and tangy apricot compote is perfect as a topping for yogurt, pancakes, or desserts.
Ingredients
Cinnamon - 1/4 teaspoon
Vanilla extract - 1 teaspoon
Lemon juice - 1 tablespoon
Water - 1/4 cup
Sugar - 1/2 cup
Apricots - 1 pound, pitted and halved
Instructions
In a saucepan, combine the apricots, sugar, water, lemon juice, vanilla extract, and cinnamon.
Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 15-20 minutes, or until the apricots are soft and the mixture has thickened.
Remove from heat and let cool slightly.
