Apricot Compote

This sweet and tangy apricot compote is perfect as a topping for yogurt, pancakes, or desserts.

Ingredients

  • Cinnamon - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Water - 1/4 cup
  • Sugar - 1/2 cup
  • Apricots - 1 pound, pitted and halved

Instructions

  1. In a saucepan, combine the apricots, sugar, water, lemon juice, vanilla extract, and cinnamon.
  2. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 15-20 minutes, or until the apricots are soft and the mixture has thickened.
  3. Remove from heat and let cool slightly.
  4. Serve warm or chilled as a topping for yogurt, pancakes, or desserts.
