Apricot Cobbler Sorbet

This refreshing apricot sorbet is inspired by the flavors of a classic apricot cobbler.

Ingredients

  • Graham cracker crumbs - 1/4 cup
  • Cinnamon - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Water - 1/2 cup
  • Sugar - 1/2 cup
  • Apricots - 2 cups, pitted and chopped

Instructions

  1. In a blender or food processor, combine the chopped apricots, sugar, water, lemon juice, vanilla extract, and cinnamon.
  2. Blend until smooth and well combined.
  3. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  4. Once the sorbet reaches a soft-serve consistency, transfer it to a freezer-safe container.
  5. Sprinkle the graham cracker crumbs over the top of the sorbet.
  6. Cover the container and freeze for at least 4 hours, or until firm.
  7. Serve the apricot cobbler sorbet in bowls or cones, and enjoy!
