Apricot Crumble Soup

Ingredients

  • Salt - 1/4 teaspoon
  • Ground almonds - 1/2 cup
  • Brown sugar - 1/2 cup
  • All - purpose flour - 1 cup
  • Butter - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Sugar - 1/2 cup
  • Water - 4 cups
  • Apricots - 1 pound, pitted and halved

Instructions

  1. In a large pot, combine the apricots, water, sugar, lemon juice, cinnamon, and vanilla extract.
  2. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes, or until the apricots are soft.
  3. In a separate bowl, combine the butter, flour, brown sugar, ground almonds, and salt.
  4. Using your fingers or a pastry cutter, mix the ingredients together until crumbly.
  5. Preheat the oven to 350°F.
  6. Transfer the cooked apricot mixture to an oven-safe dish.
  7. Sprinkle the crumble mixture evenly over the top of the apricots.
  8. Bake for 15-20 minutes, or until the crumble is golden brown and crispy.
  9. Serve the apricot crumble soup warm, either on its own or with a scoop of vanilla ice cream.
