Apricot Cobbler Lasagna

This unique twist on traditional lasagna combines the flavors of apricot cobbler with layers of pasta and creamy cheese.

Ingredients

  • Graham cracker crumbs - 1 cup
  • Vanilla extract - 1 teaspoon
  • Whipped cream - 1 cup
  • Cream cheese - 8 ounces, softened
  • Lasagna noodles - 12 sheets, cooked according to package instructions
  • Cinnamon - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Sugar - 1 cup
  • Apricots - 4 cups, pitted and sliced

Instructions

  1. Preheat the oven to 350°F.
  2. In a saucepan, combine the apricots, sugar, cornstarch, lemon juice, and cinnamon. Cook over medium heat until the mixture thickens, stirring constantly.
  3. In a separate bowl, mix the softened cream cheese, whipped cream, and vanilla extract until smooth.
  4. Spread a thin layer of the apricot mixture on the bottom of a baking dish.
  5. Place a layer of cooked lasagna noodles on top of the apricot mixture.
  6. Spread a layer of the cream cheese mixture over the noodles.
  7. Repeat the layers of apricot mixture, noodles, and cream cheese mixture until all ingredients are used, ending with a layer of cream cheese mixture on top.
  8. Sprinkle the graham cracker crumbs evenly over the top layer.
  9. Bake for 30-35 minutes, or until the cobbler lasagna is golden and bubbly.
  10. Allow to cool slightly before serving. Serve warm or at room temperature.
