Zuccotto
Zuccotto is a traditional Italian dessert made from sponge cake filled with whipped cream and often flavored with cocoa or liqueur.
Ingredients - Serves 8
- Candied fruit - 1/2 cup, chopped
- Dark chocolate - 1/2 cup, chopped
- Almond liqueur - 1/4 cup
- Vanilla extract - 1 teaspoon
- Powdered sugar - 1/2 cup
- Heavy cream - 2 cups
- Sponge cake - 1 large
Let's Get Started
- Cut the sponge cake into thin slices.
- Line a dome-shaped bowl with the sponge cake slices, making sure to cover the entire surface of the bowl.
- In a large bowl, whip the heavy cream until soft peaks form.
- Add the powdered sugar and vanilla extract to the whipped cream and continue to whip until stiff peaks form.
- Fold in the almond liqueur, chopped dark chocolate, and candied fruit.
- Spoon the cream mixture into the cake-lined bowl, making sure to fill all the gaps.
- Cover the cream with more slices of sponge cake, pressing down gently to compact the dessert.
- Refrigerate the zuccotto for at least 2 hours, or until set.
- Before serving, turn the zuccotto out onto a serving plate and dust with additional powdered sugar, if desired.
