Let's Get Started

  1. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture.
  2. Squeeze the zucchini to remove as much liquid as possible. Transfer to a large bowl.
  3. Add the beaten egg, flour, Parmesan cheese, green onions, garlic powder, salt, and black pepper to the bowl with the zucchini. Mix well to combine.
  4. Heat the vegetable oil in a large skillet over medium heat.
  5. Scoop about 1/4 cup of the zucchini mixture and flatten it into a patty. Repeat with the remaining mixture.
  6. Place the patties in the skillet and cook for 3-4 minutes per side, or until golden brown and crispy.
  7. Transfer the cooked fritters to a paper towel-lined plate to drain excess oil.
  8. Serve the zucchini fritters warm with your favorite dipping sauce.
