Zucchini Fritters
These crispy and flavorful zucchini fritters are a delicious way to enjoy fresh zucchini. They make a great appetizer or side dish.
Ingredients - Serves 4
- Vegetable oil - 2 tablespoons
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Green onions - 2, finely chopped
- Parmesan cheese - 1/4 cup, grated
- All-purpose flour - 1/4 cup
- Egg - 1, beaten
- Zucchini - 2 medium, grated
Let's Get Started
- Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture.
- Squeeze the zucchini to remove as much liquid as possible. Transfer to a large bowl.
- Add the beaten egg, flour, Parmesan cheese, green onions, garlic powder, salt, and black pepper to the bowl with the zucchini. Mix well to combine.
- Heat the vegetable oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the zucchini mixture and flatten it into a patty. Repeat with the remaining mixture.
- Place the patties in the skillet and cook for 3-4 minutes per side, or until golden brown and crispy.
- Transfer the cooked fritters to a paper towel-lined plate to drain excess oil.
- Serve the zucchini fritters warm with your favorite dipping sauce.
