Zucchini and Cheese Stuffed Peppers
These delicious stuffed peppers are filled with zucchini, cheese, and flavorful spices.
Ingredients - Serves 6
- Fresh basil - 2 tablespoons, chopped
- Parmesan cheese - 1/2 cup, grated
- Mozzarella cheese - 1 cup, shredded
- Salt and pepper - To taste
- Italian seasoning - 1 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Zucchini - 2 medium, grated
- Bell peppers - 6
Let's Get Started
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and cook until the onion is translucent.
- Add the grated zucchini, Italian seasoning, salt, and pepper. Cook for 5 minutes, or until the zucchini is tender.
- Remove the skillet from heat and let it cool slightly.
- Stir in the shredded mozzarella cheese, grated Parmesan cheese, and chopped fresh basil.
- Stuff the bell peppers with the zucchini and cheese mixture.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 20 minutes, then remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Serve hot and enjoy!
