Zoni
Zoni is a traditional Japanese soup made with mochi rice cakes and vegetables in a savory broth.
Ingredients - Serves 4
- Spinach - 2 cups
- Green onions - 2, chopped
- Shiitake mushrooms - 4, sliced
- Carrot - 1, sliced
- Daikon radish - 1 cup, sliced
- Sugar - 1 teaspoon
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Chicken broth - 4 cups
- Mochi rice cakes - 8 pieces
Let's Get Started
- In a large pot, bring the chicken broth to a boil.
- Add the soy sauce, mirin, and sugar to the broth and stir to combine.
- Add the daikon radish, carrot, and shiitake mushrooms to the pot. Simmer for 15 minutes, or until the vegetables are tender.
- Meanwhile, blanch the spinach in boiling water for 1 minute. Drain and set aside.
- Toast the mochi rice cakes on a grill or in a toaster oven until they are puffed and slightly crispy.
- To serve, place a few mochi rice cakes in each bowl. Ladle the hot soup over the rice cakes, making sure to distribute the vegetables evenly.
- Top each bowl with some blanched spinach and chopped green onions.
- Serve hot and enjoy!
