Ingredients - Serves 4

Let's Get Started

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the soy sauce, mirin, and sugar to the broth and stir to combine.
  3. Add the daikon radish, carrot, and shiitake mushrooms to the pot. Simmer for 15 minutes, or until the vegetables are tender.
  4. Meanwhile, blanch the spinach in boiling water for 1 minute. Drain and set aside.
  5. Toast the mochi rice cakes on a grill or in a toaster oven until they are puffed and slightly crispy.
  6. To serve, place a few mochi rice cakes in each bowl. Ladle the hot soup over the rice cakes, making sure to distribute the vegetables evenly.
  7. Top each bowl with some blanched spinach and chopped green onions.
  8. Serve hot and enjoy!
