  1. Clean the oysters under cold running water. Shuck the oysters and place them on a bed of crushed ice or rock salt.
  2. In a small bowl, combine the red wine vinegar, minced shallot, and black pepper. This is your mignonette sauce.
  3. Serve the oysters with the mignonette sauce and lemon wedges on the side.
  4. To eat, spoon a little mignonette sauce onto each oyster and squeeze a little lemon juice over it. Enjoy!
