Veggie Tacos
These delicious veggie tacos are filled with a variety of colorful vegetables and topped with a flavorful sauce.
Ingredients - Serves 4
- Hot sauce - To taste
- Sour cream - 1/2 cup
- Salt and pepper - To taste
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped
- Avocado - 1, sliced
- Corn kernels - 1 cup, cooked
- Black beans - 1 cup, cooked
- Red onion - 1/2, thinly sliced
- Zucchini - 1, sliced
- Bell peppers - 2, thinly sliced
- Corn tortillas - 8
Let's Get Started
- Heat a drizzle of oil in a large skillet over medium heat.
- Add the bell peppers, zucchini, and red onion. Cook until the vegetables are tender, about 5-7 minutes.
- Add the black beans and corn kernels to the skillet. Season with salt and pepper. Cook for another 2-3 minutes.
- In a small bowl, combine the sour cream, lime juice, and chopped cilantro. Stir well.
- Warm the corn tortillas in a dry skillet or microwave.
- To assemble the tacos, spread a spoonful of the sour cream mixture onto each tortilla.
