Veggie and Quinoa Collard Wraps

Ingredients - Serves 4

Let's Get Started

  1. Blanch the collard greens in boiling water for 30 seconds, then immediately transfer to a bowl of ice water. Dry thoroughly.
  2. Spread a layer of hummus on each collard green leaf.
  3. In the center of each leaf, layer the quinoa, bell pepper, carrot, cucumber, and avocado. Season with salt and pepper.
  4. Fold in the sides of the collard green leaf and roll up tightly, like a burrito.
  5. Cut each wrap in half before serving.
