Veggie and Quinoa Collard Wraps
These healthy and delicious wraps are packed with colorful veggies, quinoa, and wrapped in collard greens.
Ingredients - Serves 4
- Salt and pepper - To taste
- Hummus - 1/2 cup
- Avocado - 1, sliced
- Cucumber - 1, thinly sliced
- Carrot - 1, thinly sliced
- Red bell pepper - 1, thinly sliced
- Quinoa - 1 cup, cooked
- Collard greens - 8 large leaves
Let's Get Started
- Blanch the collard greens in boiling water for 30 seconds, then immediately transfer to a bowl of ice water. Dry thoroughly.
- Spread a layer of hummus on each collard green leaf.
- In the center of each leaf, layer the quinoa, bell pepper, carrot, cucumber, and avocado. Season with salt and pepper.
- Fold in the sides of the collard green leaf and roll up tightly, like a burrito.
- Cut each wrap in half before serving.
