Vegetable Stew
A hearty and healthy vegetable stew that's packed with flavor and nutrients.
Ingredients - Serves 4
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaf - 1
- Vegetable broth - 4 cups
- Tomatoes - 1 can, diced
- Potatoes - 2, chopped
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Garlic - 3 cloves, minced
- Onions - 2, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions and garlic and cook until the onions are soft, about 5 minutes.
- Add the carrots, celery, and potatoes and cook for another 5 minutes.
- Add the tomatoes, vegetable broth, bay leaf, thyme, salt, and pepper. Bring to a boil.
- Reduce the heat to low and simmer for 45 minutes, or until the vegetables are tender.
- Remove the bay leaf before serving.
