Vegetable Soup

Ingredients - Serves 6
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaf - 1
- Vegetable broth - 6 cups
- Corn - 1 cup
- Green beans - 1 cup, cut into 1-inch pieces
- Tomatoes - 2 medium, diced
- Potatoes - 2 medium, diced
- Garlic - 3 cloves, minced
- Celery - 2 stalks, sliced
- Carrots - 2 medium, sliced
- Onion - 1 medium, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.
- Add the potatoes, tomatoes, green beans, corn, vegetable broth, bay leaf, thyme, salt, and pepper. Bring to a boil.
- Reduce the heat and simmer for 20 minutes, or until the vegetables are cooked through.
- Remove the bay leaf before serving.
