Vegetable Fried Rice with Basmati Rice
This delicious vegetable fried rice is made with fragrant basmati rice and a variety of colorful vegetables.
Ingredients - Serves 4
- Black pepper - To taste
- Salt - To taste
- Sesame oil - 1 tablespoon
- Soy sauce - 3 tablespoons
- Green onions - 4, sliced
- Bell peppers - 1, diced
- Peas - 1 cup, frozen
- Carrots - 2, diced
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tablespoons
- Basmati rice - 2 cups, cooked and cooled
Let's Get Started
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
- Add diced carrots and cook for 2-3 minutes until slightly softened.
- Add frozen peas, diced bell peppers, and sliced green onions. Stir-fry for another 2-3 minutes.
- Push the vegetables to one side of the skillet and add the cooked and cooled basmati rice to the other side.
- Drizzle soy sauce and sesame oil over the rice, and season with salt and black pepper. Mix everything together and stir-fry for 3-4 minutes until heated through.
- Taste and adjust seasoning if needed.
- Serve hot and enjoy!
