Vegetable and Barley Stew

Ingredients - Serves 6

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions, carrots, celery, and garlic and cook until the vegetables are soft, about 10 minutes.
  3. Add the barley and cook for another 2 minutes.
  4. Add the vegetable broth, tomatoes, bay leaf, thyme, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for about 45 minutes, or until the barley is tender.
  6. Remove the bay leaf before serving.
