Vegetable and Barley Stew

Ingredients - Serves 6
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaf - 1
- Tomatoes - 1 can, diced
- Vegetable broth - 6 cups
- Barley - 1 cup
- Garlic - 2 cloves, minced
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Onions - 2, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions, carrots, celery, and garlic and cook until the vegetables are soft, about 10 minutes.
- Add the barley and cook for another 2 minutes.
- Add the vegetable broth, tomatoes, bay leaf, thyme, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 45 minutes, or until the barley is tender.
- Remove the bay leaf before serving.
