Vegan Fried Rice

Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 3, chopped
- Sesame oil - 1 tablespoon
- Soy sauce - 3 tablespoons
- Bell pepper - 1, diced
- Peas - 1 cup, frozen
- Carrots - 2, diced
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Vegetable oil - 2 tablespoons
- Cooked rice - 4 cups, cold
Let's Get Started
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add diced onion and minced garlic to the skillet and sauté until fragrant and translucent.
- Add diced carrots, frozen peas, and diced bell pepper to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
- Push the vegetables to one side of the skillet and add the cold cooked rice to the other side. Break up any clumps of rice with a spatula.
- Drizzle soy sauce and sesame oil over the rice and vegetables. Stir well to combine and evenly distribute the seasonings.
- Cook for an additional 3-5 minutes, or until the rice is heated through.
- Season with salt and pepper to taste.
