Vanilla Slice
A classic, creamy dessert with layers of puff pastry, custard filling, and a sweet icing topping.
Ingredients - Serves 8
- Water - 2 tablespoons
- Icing sugar - 1 cup
- Butter - 2 tablespoons
- Cornflour - 1/4 cup
- Sugar - 1/2 cup
- Egg yolks - 4
- Vanilla bean - 1, split and seeds scraped
- Milk - 2 cups
- Puff pastry - 2 sheets
Let's Get Started
- Preheat the oven to 200°C. Place the puff pastry sheets on a baking tray and bake for 15 minutes, or until golden and puffed. Set aside to cool.
- In a saucepan, combine the milk and vanilla bean and seeds. Bring to a simmer over medium heat.
- In a bowl, whisk together the egg yolks, sugar, and cornflour. Gradually whisk in the hot milk mixture.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
- Remove from heat and stir in the butter. Pour the custard over one sheet of the cooled puff pastry and top with the second sheet.
- In a bowl, combine the icing sugar and water to make a smooth icing. Spread over the top layer of puff pastry.
- Refrigerate for at least 2 hours, or until set, before slicing and serving.
