Ingredients - Serves 8

Let's Get Started

  1. Preheat the oven to 200°C. Place the puff pastry sheets on a baking tray and bake for 15 minutes, or until golden and puffed. Set aside to cool.
  2. In a saucepan, combine the milk and vanilla bean and seeds. Bring to a simmer over medium heat.
  3. In a bowl, whisk together the egg yolks, sugar, and cornflour. Gradually whisk in the hot milk mixture.
  4. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  5. Remove from heat and stir in the butter. Pour the custard over one sheet of the cooled puff pastry and top with the second sheet.
  6. In a bowl, combine the icing sugar and water to make a smooth icing. Spread over the top layer of puff pastry.
  7. Refrigerate for at least 2 hours, or until set, before slicing and serving.
