Ukrainian Pyrizhky
Ukrainian Pyrizhky are delicious stuffed buns filled with various fillings like meat, cabbage, or potatoes.
Ingredients - Serves 12
- Egg wash (1 egg beaten with 1 tablespoon of water) - For brushing
- Filling of your choice (e.g. ground meat, cabbage, or potatoes) - As needed
- Eggs - 2
- Butter - 1/4 cup, melted
- Warm milk - 1 1/2 cups
- Salt - 1 teaspoon
- Sugar - 2 tablespoons
- Active dry yeast - 2 1/4 teaspoons
- All-purpose flour - 4 cups
Let's Get Started
- In a small bowl, dissolve the yeast and sugar in warm milk. Let it sit for 5 minutes until foamy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture, melted butter, and eggs.
- Mix until a dough forms, then transfer to a floured surface and knead for about 5 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- Punch down the dough and divide it into 12 equal portions. Roll each portion into a small circle.
- Place a spoonful of your chosen filling in the center of each dough circle. Fold the dough over the filling and pinch the edges to seal.
- Place the filled buns on a baking sheet lined with parchment paper. Cover with a kitchen towel and let them rise for another 30 minutes.
- Preheat the oven to 375°F (190°C).
- Brush the risen buns with the egg wash.
- Bake for 20-25 minutes or until golden brown.
- Remove from the oven and let them cool slightly before serving.
