Ingredients - Serves 4

Let's Get Started

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add diced carrots, bell peppers, and frozen peas. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  5. Push the vegetables to one side of the skillet and pour beaten eggs into the empty space. Scramble the eggs until cooked through.
  6. Add the cooked udon noodles to the skillet and pour soy sauce, oyster sauce, and sesame oil over the noodles. Toss everything together to combine.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions and serve hot.
