Udon Fried Rice
This delicious udon fried rice is made with stir-fried udon noodles, vegetables, and a savory sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 2, chopped
- Eggs - 2, beaten
- Sesame oil - 1 tablespoon
- Oyster sauce - 2 tablespoons
- Soy sauce - 3 tablespoons
- Frozen peas - 1/2 cup
- Bell peppers - 1, diced
- Carrots - 2, diced
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tablespoons
- Udon noodles - 8 oz
Let's Get Started
- Cook the udon noodles according to package instructions. Drain and set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and cook for 1 minute until fragrant.
- Add diced carrots, bell peppers, and frozen peas. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Push the vegetables to one side of the skillet and pour beaten eggs into the empty space. Scramble the eggs until cooked through.
- Add the cooked udon noodles to the skillet and pour soy sauce, oyster sauce, and sesame oil over the noodles. Toss everything together to combine.
- Season with salt and pepper to taste.
- Garnish with chopped green onions and serve hot.
