Twice Baked Potatoes
These twice baked potatoes are creamy on the inside and crispy on the outside. They're a delicious side dish for any meal.
Ingredients - Serves 4
- Bacon - 4 slices, cooked and crumbled
- Green onions - 2, chopped
- Cheddar cheese - 1 cup, shredded
- Sour cream - 1/2 cup
- Butter - 4 tablespoons
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Russet potatoes - 4 large
Let's Get Started
- Preheat the oven to 400°F. Rub the potatoes with olive oil, salt, and pepper, then place on a baking sheet.
- Bake for 1 hour, or until the potatoes are soft. Let cool for 10 minutes.
- Cut the potatoes in half lengthwise. Scoop out the insides, leaving a thin layer of potato in the skins.
- Mash the potato insides with the butter, sour cream, half of the cheese, green onions, and bacon. Season with salt and pepper.
- Spoon the potato mixture back into the skins. Top with the remaining cheese.
- Bake for 15-20 minutes, or until the cheese is melted and the potatoes are heated through.
