Let's Get Started

  1. Preheat the oven to 400°F. Rub the potatoes with olive oil, salt, and pepper, then place on a baking sheet.
  2. Bake for 1 hour, or until the potatoes are soft. Let cool for 10 minutes.
  3. Cut the potatoes in half lengthwise. Scoop out the insides, leaving a thin layer of potato in the skins.
  4. Mash the potato insides with the butter, sour cream, half of the cheese, green onions, and bacon. Season with salt and pepper.
  5. Spoon the potato mixture back into the skins. Top with the remaining cheese.
  6. Bake for 15-20 minutes, or until the cheese is melted and the potatoes are heated through.
