Turtle Jelly, also known as Guilinggao, is a traditional Chinese jelly-like dessert believed to have medicinal properties. It's made from the powdered plastron (bottom shell) of the turtle and a variety of herbal products.

Ingredients - Serves 6

Let's Get Started

  1. In a large pot, add the water and turtle shell powder. Bring to a boil over high heat.
  2. Reduce the heat to low and simmer for about 1 hour.
  3. Strain the mixture through a fine sieve to remove any solids.
  4. Return the liquid to the pot and add the Chinese herbal jelly powder. Stir until the powder is fully dissolved.
  5. Add the rock sugar and stir until it's fully dissolved.
  6. Pour the mixture into a jelly mold or a flat dish. Let it cool to room temperature.
  7. Refrigerate the jelly for at least 2 hours, or until it's completely set.
  8. Cut the jelly into squares or scoop out with a spoon. Serve chilled with a drizzle of honey.
