Turtle Jelly
Turtle Jelly, also known as Guilinggao, is a traditional Chinese jelly-like dessert believed to have medicinal properties. It's made from the powdered plastron (bottom shell) of the turtle and a variety of herbal products.
Ingredients - Serves 6
- Honey - For serving
- Rock sugar - 200 grams
- Chinese herbal jelly powder - 1 packet
- Water - 1.5 liters
- Turtle shell powder - 50 grams
Let's Get Started
- In a large pot, add the water and turtle shell powder. Bring to a boil over high heat.
- Reduce the heat to low and simmer for about 1 hour.
- Strain the mixture through a fine sieve to remove any solids.
- Return the liquid to the pot and add the Chinese herbal jelly powder. Stir until the powder is fully dissolved.
- Add the rock sugar and stir until it's fully dissolved.
- Pour the mixture into a jelly mold or a flat dish. Let it cool to room temperature.
- Refrigerate the jelly for at least 2 hours, or until it's completely set.
- Cut the jelly into squares or scoop out with a spoon. Serve chilled with a drizzle of honey.
