Herbal Turtle Jelly
A traditional Chinese dessert known for its cooling properties, made from turtle shell powder and a variety of herbs.
Ingredients - Serves 6
- Wolfberries - 10 grams
- Chrysanthemum flowers - 10 grams
- Honeysuckle flowers - 10 grams
- Rock sugar - 100 grams
- Water - 1.5 liters
- Turtle shell powder - 50 grams
Let's Get Started
- Soak the turtle shell powder in water for 15 minutes.
- In a pot, add the soaked turtle shell powder, honeysuckle flowers, chrysanthemum flowers, and water. Bring to a boil.
- Reduce the heat and simmer for 2 hours.
- Strain the mixture and discard the flowers.
- Return the liquid to the pot and add the rock sugar. Stir until the sugar is fully dissolved.
- Pour the mixture into a jelly mold and let it cool to room temperature.
- Refrigerate for at least 4 hours, or until the jelly is set.
- Serve chilled, garnished with wolfberries.
