Tunisian Curry
This Tunisian curry is a flavorful and aromatic dish made with a blend of spices, vegetables, and protein of your choice.
Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh cilantro - 1/4 cup, chopped
- Lime juice - 2 tablespoons
- Coconut milk - 1 cup
- Vegetable broth - 2 cups
- Protein (chicken, beef, or tofu) - 1 lb, cubed
- Potatoes - 2, diced
- Carrots - 2, sliced
- Bell peppers - 2, sliced
- Tomatoes - 2 large, diced
- Tunisian spice blend - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 large, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and cook until softened, about 5 minutes.
- Add the minced garlic, grated ginger, and Tunisian spice blend. Cook for another 2 minutes, stirring constantly.
- Add the diced tomatoes, sliced bell peppers, sliced carrots, diced potatoes, and cubed protein of your choice. Stir well to coat everything in the spices.
- Pour in the vegetable broth and coconut milk. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the vegetables are tender and the flavors have melded together.
- Stir in the lime juice and season with salt and pepper to taste.
