  1. Preheat the oven to 375°F.
  2. Cook the macaroni according to the package instructions, then drain and set aside.
  3. In a large saucepan, melt the butter over medium heat. Stir in the flour to make a roux, then gradually whisk in the milk. Bring to a simmer, stirring constantly.
  4. Remove the saucepan from the heat and stir in the cheddar and Gruyere until melted. Stir in the truffle oil, salt, and pepper.
