Tompouce is a traditional Dutch pastry that is often eaten on King's Day. It consists of a thick layer of pastry cream sandwiched between two layers of puff pastry, topped with a sweet pink icing.

Let's Get Started

  1. Preheat the oven to 200°C (390°F).
  2. Roll out the puff pastry and cut into rectangles. Place on a baking sheet lined with parchment paper.
  3. Brush the puff pastry with the beaten egg and bake for 15 minutes, or until golden brown. Allow to cool.
  4. While the puff pastry is cooling, prepare the icing by mixing the powdered sugar, pink food coloring, and milk until smooth.
  5. Cut each piece of puff pastry in half horizontally. Spread a thick layer of pastry cream on the bottom half of each piece, then place the top half back on.
  6. Spread the pink icing on top of each tompouce. Allow the icing to set before serving.
