Tompouce
Tompouce is a traditional Dutch pastry that is often eaten on King's Day. It consists of a thick layer of pastry cream sandwiched between two layers of puff pastry, topped with a sweet pink icing.
Ingredients - Serves 8
- Milk - 2 tablespoons
- Pink food coloring - A few drops
- Powdered sugar - 1 cup
- Pastry cream - 2 cups
- Egg - 1, for egg wash
- Puff pastry - 2 sheets
Let's Get Started
- Preheat the oven to 200°C (390°F).
- Roll out the puff pastry and cut into rectangles. Place on a baking sheet lined with parchment paper.
- Brush the puff pastry with the beaten egg and bake for 15 minutes, or until golden brown. Allow to cool.
- While the puff pastry is cooling, prepare the icing by mixing the powdered sugar, pink food coloring, and milk until smooth.
- Cut each piece of puff pastry in half horizontally. Spread a thick layer of pastry cream on the bottom half of each piece, then place the top half back on.
- Spread the pink icing on top of each tompouce. Allow the icing to set before serving.
